Roast chicken & buttered rice

This is my recipe cincai style.

I would like to utilize my oven, and eager to roast a whole chicken in it. But later on, have a change of mind and flatten or butterfly my whole chicken to roast it evenly.



Roast chicken

1 whole chicken (1.2kg) flatten ( buy whole chicken and try google on how to butterfly your chicken or flatten your chicken)

A:
1 tbsp garlic powder
1tbsp paprika
Juice of 1/2 lemon
Salt to taste
Butter

B:
1tbsp honey + 2 tbsp oil + 1tbsp water + some black pepper (combine to make a glaze)

1. Clean and pat dry the chicken with kitchen towel.
2. Rub A to the whole chicken. Try to slide in underneath skin.
3. Marinate for 15 minutes or more
4. Roast in oven @ 170 for 30 mins. ( time differ between oven. Mine, 13 mins for every 450 gm of chicken)
5. 10 mins before done, put the glaze on the skin. Let the skin caramelized.

Buttered rice
1pot rice
1 1/4 pot water

1inch ginger (grated)
1/2 cube chicken stock
25gm butter (roughly)
2 pandan leaves
Salt to taste
A pinch tumeric for color

1. Wash rice .
2. Combine everything in pot. Cook as per usual.
